I'm working my way through a giant tub of pumpkin puree in my fridge, and this pumpkin bread was the next pumpkin recipe on my radar. Pumpkin bread seems like the ultimate comfort food. It's spiced perfectly, super moist, and the brown sugar streusel that I added provides a nice little crunch.
I ran a 5k yesterday morning and felt great after. Cut to a few hours later and I was holed up in bed with a brutal migraine. It finally broke in the evening thanks so lots and lots of Diet Snapple (my secret headache weapon) and I wanted to do something productive. I thought of studying for the GRE. That felt too ambitious, so I scaled down my ambition and made this pumpkin bread instead.
